The Visionary
Chef Marcus Beaumont
Two decades of fire, flavor, and relentless pursuit of the perfect steak.

The Journey
Marcus Beaumont's culinary story began in the kitchens of rural Provence, where his grandmother taught him that extraordinary food starts with extraordinary ingredients. By twenty-one, he'd earned his first Michelin star at Maison Dorée in Paris.
A decade of refinement followed — studying butchery in Argentina, mastering the wood grill in the Basque Country, and perfecting dry-aging techniques alongside Japan's most revered wagyu artisans. Each chapter added depth to his singular vision.
In 2019, he opened The Gilded Rib with a simple conviction: New York deserved a steakhouse that married old-world craft with modern precision. A place where the ritual of dining is elevated to art.
Today, Chef Marcus personally oversees every aspect of the kitchen — from selecting cattle at auction to the final sear on your steak. His hands touch every plate that leaves the pass.
Culinary Philosophy
Source Relentlessly
Every cut comes from family-owned ranches across the American heartland and the finest Wagyu farms of Japan. We know the name of every producer.
Age with Patience
Our custom-built Himalayan salt aging chamber develops flavor over 28 to 60 days. Great steak cannot be rushed.
Honor the Fire
White oak, charcoal, and 1200°F heat. No shortcuts, no gimmicks — just the primal mastery of flame that has defined great cooking for millennia.
Plate with Purpose
Every element on the plate earns its place. No garnish for beauty alone. Each component amplifies the star of the dish — the steak itself.
